Acipenser Transmontanus or White Sturgeon is one of the most highly regarded species round the world for the taste of its caviar. It is a pure species, native to the West coast of the USA, and lives mainly in the Sacramento and Columbia Rivers.
Our sturgeons are raised in our farms for 8 to 10 years in order to obtain the best quality caviar.
