From farm to table


Our mission is to farm white sturgeon (Acipenser transmontanus) in an environmentally responsible manner with respect for the fish in order to produce ecologically sustainable caviar for our customers’ enjoyment.


Sterling Caviar is the pioneer on sustainable sturgeon farming and caviar production. We began marketing caviar in 1993, after several years developing techniques and farming sturgeon. We are part of the Stolt Sea Farm group that in turn is the aquaculture division of Stolt-Nielsen LTD.

Sterling Caviar’s history as an institution in the world of caviar is referenced in books such as Caviar: a Global History by Nichola Fletcher, Philosopher Fish by Richard Adams Carey and Caviar, The Strange History and Uncertain Future of the World’s Most Coveted Delicacy by Inga Saffron.
